- 3 large hard-boiled eggs, peeled and chopped
- 1 large avocado, cubed
- 2 tbsps mayonnaise
- 1/2 cup onion, chopped
- 1 slice bacon
- 1/4 tsp kosher salt
- 1/4 tsp ground pepper
- 1/2 tsp mustard
- 1 tbsp coconut oil, to cook bacon
