  • 1 lb broccoli florets (roughly 6 cups)
  • 8 oz cream cheese
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 cup heavy cream
  • 1 tbsp curry powder
  • 1 tsp salt
  • 2 tsp Better than Bouillon or 2 bouillon cubes
  • 4 cups of cooked chicken breast, shredded
  • 2 cups of cheddar cheese, grated
  • Cooked rice (or cauliflower rice) for serving, optional


  1. Place a large pot of water to a boil over high heat. 
  2. Add the broccoli and cook for 3 minutes. Remove from heat and drain. Set broccoli aside.
  3. In a medium-sized bowl, microwave the cream cheese, mayonnaise, sour cream, and heavy cream along with curry powder and bouillon for 1 minute at a time for up to 3 minutes, until the cream cheese is softened. Whisk until smooth.
