Ingredients

  • 1 pound ribeye steak
  • Kosher salt
  • Freshly ground black pepper
  • 1 tablespoon olive oil
  • 1 head of romaine lettuce, chopped
  • 1 avocado, sliced
  • 1 tomato, sliced
  • 1/4 red onion, thinly sliced
  • 1/3 cup crumbled blue cheese

Instructions

  1. Preheat a grill to medium-high heat. Season the steak generously with salt and pepper.
  2. Grill the steak for 4-5 minutes per side, or until cooked to desired doneness.
  3. While the steak is cooking, prepare the dressing. In a blender or food processor, combine all of the dressing ingredients and blend until smooth. Season with salt and pepper to taste.
  4. To assemble the salad, place the chopped romaine lettuce in a large bowl. Top with the sliced avocado, tomato, and red onion.
  5. Once the steak is cooked, slice it thinly and arrange it over the salad.
  6. Crumble the blue cheese over the salad and drizzle with the blue cheese dressing.
  7. Serve immediately.

Notes

  • If you don't have a grill, you can cook the steak in a cast-iron skillet over medium-high heat.
  • For a vegetarian option, you can replace the steak with grilled portobello mushrooms.
  • You can also add other ingredients to the salad, such as cucumbers, carrots, or croutons.
